As the seasons change, so do our menus.
Rising temperatures mean summer is approaching and our latest menu reflects the delicate delights of what Mother Nature currently has to offer.
Head chef Peter Tzimas said that meant incorporating short-lived treats such as juicy, golden mangoes and sweet, fragrant stone fruit into dishes and desserts.Tomatoes, too, were at their ripest, tastiest and most vibrant in the hotter months.
“Summer’s great,’’ Peter said.
“There’s far more to work with in terms of fresh produce. And the colours and smells are so inspiring.’’
It comes as no surprise that crisp and cooling salads, such as our much-loved prawn salad, are never more in demand than during these hot, sweltering months.
Platters, too, are a summertime favourite.The Golden Ox is renowned for its fresh and local seafood and both our classic and platinum seafood platters feature a delicious array of cold
and hot treats from the sea. Great to share with friends, especially as the festive seasoncalls for non-stop end-of-year parties and Christmas celebrations.
Classic favourites, such as snapper with mango, will sit nicely alongside some brand-new dishes on the summer menu, Peter said.
Parents Nick and Virginia Tzimas, who own The Golden Ox, said the restaurant was passionate about using the freshest produce available.
“It depends on the season and availability — what’s best,’’ Nick said.
“The quality of produce. Sustainability is also very important to us.’’
Nick said seafood always featured heavily on the menu, regardless of season, along with aged beef, poultry, vegetarian dishes and mouth-watering desserts.
“For us, it’s about innovation, high quality and presentation.’’
