We have already reached the middle of 2019 and Chef Peter continues to impress us with his creativity and artistry using the wonderful fresh local produce of the Moreton Bay region.
Peter and his team are putting together mouth-watering combinations of ingredients to deliver a unique degustation dining experience. His culinary dishes include beautifully grilled Hervey Bay scallops, Moreton Bay prawns, poached Moreton Bay bugs, whiting fillet, and delicately smoked duck breast. Each of these dishes are full of characteristic flavour and elegantly complimented by various accompaniments such as corn and dill mousseline, salmon pearls, caper remoulade and morello cherry glaze to name a few.
These dishes will be accompanied by 5 different hand selected wines chosen specially by Virginia, Nick and Peter to marry in the flavours of the wine alongside each dish. From Pinot noir, to Pinot Gris, Chardonnay and Riesling, each wine provides a different array of flavours for you to try.
